Born in France, Claudie began her career in the restaurant industry in London after completing a degree in International Marketing in the north of England. She spent her early years refining her craft within Michelin-starred restaurants, progressing through front-of-house and operational roles and developing a strong foundation in service and hospitality.
In 2007, she returned to France to further deepen her expertise, undertaking a Master’s in Managerial Finance and Hospitality Cost Control at the Institut Paul Bocuse in Lyon. This led to an internship with Alain Ducasse’s newly opened restaurant at The Dorchester, before returning to London to continue her career.
Over the following six years, Claudie held a series of senior Food & Beverage roles within the Alain Ducasse Groupacross Paris and London, building a reputation for operational excellence and a sharp commercial understanding of high-end dining.
In 2012, she relocated to Dubai to join Zuma Dubai, marking the beginning of her career in the Middle East. She went on to become Global Projects Director, overseeing the international expansion of the brand, delivering seven global openings. Alongside Zuma, she also played a key role in the development and launch of leading concepts including La Petite Maison, ROKA, and Amazonico in the UAE.
In February 2020, Claudie took on a new chapter as Director of Operations for Mauro Colagreco’s group, whose flagship restaurant Mirazur was ranked number one in The World’s 50 Best Restaurants. She relocated to Menton on the French Riviera, before returning to Dubai the following year.

In 2021, she founded her own project management company, specialising in high-end Food & Beverage and owner’s representation. Today, she operates across the Middle East and internationally, advising on and delivering complex hospitality projects with a focus on precision, creativity and long-term value.
